Cheesy Jalapeno Poppers

I love jalapenos, and I am constantly pushing them on my friends.  So many people are scared to try these delicious little peppers because of their ( well deserved) reputation.  The thing is, its the seeds that hold most of the heat, and if you prepare them right, jalapenos can be downright mild.
Just don’t eat a seed, even on a dare.
These jalapeno poppers are my new go-to recipe, they have a teeny bit of heat, but not so much that my four year old cant eat them.
This recipe is enough for 20 poppers, and I recommend wearing gloves when working with the jalapeno seeds.


Cheesy Jalapeno Poppers

10 jalapenos, halved with the seeds removed
1 pack regular softened cream cheese
1/2 cup cheddar cheese
1 Tbsp onion powder
1 Tbsp garlic powder

Preheat oven to 425.
In a medium bowl, mix cream cheese, cheddar, onion powder and garlic powder until they are well combined.  Using a big spoon, fill the halved jalapenos almost to the top, dont overfill them, or you’re going to have a mess.  Arrange on a baking sheet and bake in the preheated oven for 20 minutes, until the tops are browning.  Remove from the oven, let stand for 20 minutes, and serve

    I just use jalapenos and chunks of sharp cheddar. Not only do I not wait for them to cool (and consequently burn my mouth) but I never wear gloves. A couple weeks ago I stuck a finger in my eye. It was several minutes before I could see well enough to continue. I even had a case of blepharitis (inflammation of the eyelids where the eyelashes are) for a month or more and it wasn’t enough to persuade me to wear gloves.
