Lemon Basil Pesto

A classic Basil Pesto, with a twist! This recipe only requires a few fresh ingredients. A must make this summer!

One of my favorite parts of summer is the abundance of fresh clean flavors that come along with the sunshine, BBQ, sweet salads, fresh EVERYTHING. Its gastronomic bliss!
Last week brought along with it the first real taste of summer weather, and one of the first “summery” recipes I brought out, was this one, for lemon basil pesto.Β  This is a great recipe because it goes with everything, and its bursting with fresh flavors of lemon, garlic, and sweet basil.Β  You can toss it on pasta, dip your bread in it, use it on meat, your imagination is the only limit.

Lemon Basil Pesto

You Will NeedA classic Basil Pesto, with a twist! This recipe only requires a few fresh ingredients. A must make this summer!

1 cup of fresh basil torn or chopped
1/2 cup freshly grated Parmesan cheese
juice from one lemon
1 clove of garlic peeled
3 Tbsp olive oil
salt and pepper to taste

Toss all the ingredients except for the olive oil into a food processor or blender and pulse while slowly adding the oil.Β  Once all the oil is in, and the ingredients are well combined, scoop it all ino a bowl and refrigerate for half an hour ( up to 24 hours).
