It’s almost that time of year again.School will be back in session in a few days and we will all be tossed back into the world of packed lunches, after-school snacks and quick and easy weeknight meals. I feel like my family is so busy already during the summer with swimming lessons, gymnastics and life in general that I can’t even imagine what it’s going to be like to get back into the school routine- and of course this year V starts kindergarten as well, so it will be school routine times two!
I think the thing I am looking forward to the least is lunches. Having to pack fresh, nutritious lunches everyday has always been a challenge for me. I was constantly disagreeing with my biggest little last year.Her idea of a balanced lunch is pizza and a cupcake.Mine is, well, let’s just say slightly different.
This year though I’m prepared.My snack bins and their lunch boxes are going to be packed with healthy and affordable options from Walmart’s Great Value grocery line.
We’ve been snacking on Great Value [http://www.walmart.ca/en/grocery/great-value/N-117+1019684] products all summer so I know they love them.With a variety of different snack options to choose from, I don’t have to worry about them getting bored. Fruit snacks, dipped granola bars, crackers, fruit, drinkable yogurts, bagels, bread and wraps, and juice boxes are all among my littles’ faves.
Additionally, many of these snacks are also peanut-free and affordable (so I don’t have to worry about bankrupting myself to feed four kids).
I’ve been able to find great products for dinners as well. One of our favouritesis Great Value Gluten-Free Penne, which I use to make this delicious Creamy Pancetta Penne:
To serve a family of 5 you will need:
1 pkg Great Value Gluten-Free Penne
1 tbsp butter
1/2 white onion, diced
1 cup pancetta, chopped
1 cup asparagus, chopped
1/2 cup heavy cream
1/4 cup fresh parmesan, grated
Salt and pepper to taste
- Set a large pot of water to boil, add pasta and cook for 7 minutes.
2. On medium, melt butter in a large skillet; add onion and sauté 2-3 minutes until opaque
3. Add pancetta and sauté until slightly browned
4. Add asparagus and sauté 2 more minutes
5. Add cream and bring almost to a boil, add in parmesan and stir until melted, add salt and pepper to taste.
6. Toss pasta in sauce and serve with salad and fresh crusty bread.
It’s that simple!Now you have a healthy and inexpensive meal on the table in less than 20 minutes. What more could a busy mom need?
